Title: Add your eccentric food habits/tips/quirks here!
Post by: navkat on October 29, 2008, 09:43:52 AM
(Request for a sticky status.)

I'll start:

The sea-salt in my house is intended for my salt grinder, but I have recently taken to adding whole sea-salt kernels to other stuff I'm eating: my favorite is to slather cream cheese on a bagel and then sprinkle some sea salt into the cream cheese...soooo yummy. I also add sea-salt directly to my salad and reduce the need to add dressing.

I've been known to put melted butter and ground black pepper on salad though. :(

I eat ripe tomatoes raw...just dip them in a little balsamic vinegar and sprinkle them with olive oil and black pepper.

What quirky foodie stuff do you like?

when I am shitfaced, I like to make a box of mac & cheese and stir in a can of baked beans.

Wow...why don't you complete the circle and add hhot-dogs? Are you afraid you'll implode the space-time continuum?

When I was in the Navy and standing duty, I'd go to the McDonald's on-base, order a FlickMurray (McFlurry) and some french fries to dip in.

I like odd juxtapositions of flavour and texture: I like to buy pints of chocolate ice cream and when I get to about the halfway point; dump in a shitton of coconut and nuts and lately; sea-salt. Then I miix that shit up into a ball of what-the-fuck-is-that and eat it with a fork AND a spoon.

Maybe that's not THAT weird, but yeah; I def understand that pretzel shit.

I completely understand the sweet and salty combination.

I would have to say the weirdest thing I eat is pizza rolls dipped in blue cheese dressing, which was an accident one night when I was trashed and then it became a favorite!

Some people think pineapple pizza (no ham, plz) is weird..  :? (Though I have to say, I think mashed potato pizza is the strangest I've had so far.)

I eat mayonnaise and pickle sandwiches all the time, which some people think is weird (since when did all sandwiches have to have meat or peanut butter in them?). Also, as a native of Cincinnati, OH, I put chili on EVERYTHING: potato chips, foccacia bread, hotdogs, macaroni, pancakes, etc.

Man, now I'm itching for some Skyline Chili . . .

Skyline chili tastes like cloves to me.  Otherwise, we put chili on a lot of stuff here in STL too.  Chili-Mac is available in most locally owned restaraunts as well as chili over chips (usually homemade).  MMMMM

OH YES another one of mine - homemade potato chips with chili and blue cheese sauce that has pimentoes, green onions and chopped habenero.  ZOMG it is soooooo good.

Any kind of blue cheese + something else = :D

No, this isn't me being "intentionally weird" by professing my love for cheese. I really do enjoy the kinds of cheese that make many people gag.

And I totally hear ya, navkat, about the salt. I have a strong preference for kosher salt. For ++JEW, I spread butter on a plain matzoh and sprinkle kosher salt on it.

Really?

That's pretty cool, as long as you don't eat Gorilla Glue.

I've always wanted to know: is there a major taste disparity between Elmer's and other, more industrial-strength glues? Intuition tells me that Elmer's probably has that down-home-comfort quality to it, whereas specialty glues for crafting probably have a more exotic flavor.

Peel 6-8 large potatoes.
Slice very thin, think tortilla thin...
wash quickly with cold water, then place in salted water to wait to cook.
DRY BEFORE PUTIING IN OIL, I pull out my next handful and drain them on a towel!

heat peanut oil to high, then reduce to best level not to burn potatoes you know your stove better than me- I only use peanut oil, it allows for crispier chips without getting brown and nasty!!
cook a handful at a time and let drain, sprinkle with cracked black pepper and sea or kosher salt

make your own chili, I have a couple of recipes on here for chili.  this works with chicken chili as well....

bleu cheese sauce

1 bottle bleu cheese dressing of your choice
I use the one in the cold veggie section maries I think - 2 jars if that
1 container of additional bleu cheese crumbles
1 jar drained chopped pimentos
4-5 chopped green onions (withhold a bit of the green to garnish)
1 med roasted habenaro chopped fine
I also add a lot of cracked black pepper

heat dressing and extra cheese on low until fairly smooth - stir constantly.
add pimentos, onion and peppers and stir together until they are warm as the dressing
drizzle over chips and bowl some for dipping
garnish with green

DING DING DING.  this is what I put on my quesodillas.

Also:  I once had a "diet" of Wow chips and pepperocinis...juice from the peppers would saturate the chips and make for yum.  I lost tons of weight on it too.  Between the fiber and the Wow chips.

Still love that combination, though--the peppers and the chips.  Wow chips, don't buy them anymore, though.

Yea it is. Plus we've made some pretty damn good broccoli, cheddar & chicken pizzas using leftovers and on top of cheese frozen pizzas. Chicken and spaghetti not that odd - reminds me of chicken parm.

I'm sure I have some eating habits people might think are weird - can't think of any off the top of my head. My mom thinks it's weird if I tell her I had a baked potato for breakfast, but we just don't keep a lot of breakfast foods in the house since no time during the week and he works weekends, so usually don't feel like cooking breakfast just for myself. And potatos are good always!

Leftover grilled chicken, spinache, water chestnuts, mushrooms and black olives.  Mix jar alfredo with mozzerella and spread it on a crust, we use the Boboli ones, then cover with the chicken and stuff.  then sprinkle a light sprinkle of just cheese to hold it all in place!  OMG YUM!!!

I need to learn how to make miso soup. :(

It's very easy! First, you must acquire a tub a miso (the white or light yellow miso is best).
Bring a pot of dashi stock to a boil (or some water with instant dashi powder dissolved in it). Once it's at a boil, turn the heat down low so that it's no longer boiling. Then, take 1 tbl spoon of miso paste for every 1 cup of stock, and stir it in until it's dissolved. You may need to adjust the taste, adding more miso if it's too bland or thin it out with water if it's too salty. Then you can add little cubes of tofu, scallions, seaweed, or whatever you want!

Where does one acquire dashi stock and miso?

You can get miso at an Asian market, or some health food stores will sell it in the refrigerated section.
Dashi is most easily acquired in powdered form, probably either labeled hunmatsu dashi or hondashi, and come in packets at an Asian market.
But quite honestly, I usually skip the dashi altogether, and just use vegetable stock.

Hrm...if you're really desperate supermarkets carry the whole miso soup shebang in powdered form, with little bits of desiccated tofu and all.

But the only thing really necessary for miso soup is the miso paste, so if you can find that, you're good. Do have a Whole Foods or something similar in your area? I'm sure they would carry it.

i like cold leftover pizza the next day.

i used to cook a lot with potatoe crisps, figuring there must be a way to use them correctly. it doesn't work in pasta sauce, they get soggy. best way i've found in years of experimentation is to crumble them very fine (open the bag a bit to let the air out and crunch it from the outside so your hands don't get covered in it) and use them instead of breadcrumbs to cover stuff with.

sometimes i like making a bowl of dipsauce from mayonaise, chilli peppers, garlic and stock/bouillon powder (and maybe some yoghurt, or whatever i can think of) and dipping pieces of turkish flatbread in it. it's probably very unhealthy.

i like reheating day-old cold coffee in my microwave, it makes me feel like a necromancer.

One of my old favorite sauces, NOT KIDDING.
Pickle juice, ketchup, chocolate milk, hotsauce, black pepper. Mix that all up. Use for fries.

potato chips inside sandwiches just makes perfect sense, imho.  Makes 'em good n crunchy...

Seconded.

In fact; if you REALLY want to make this work, don't stop at just a few chips--make an ENTIRE LAYER of chips sandwiched between lettuce leaves on the sandwich.

Crunch.

Peanut butter, pickle, lettuce, and mayonnaise sandwiches.  It has to be the high sugar trans fatty peanut butter to make it sooooo good.  Also, balsamic vinegar on ice cream.

I didn't invent either one of these.  I am not the freak.

Miracle Whip is delicious.

I would eat it with a spoon if it were socially acceptable to do so.

mayonnaise, on the other hand, is just about the nastiest substance known to man unless heavily flavored.

Miracle Whip Scrubs Scales
Newspaper Columns, Herb & Home Remedy Q&A June 29, 2007

Q. For several months now I have had a problem with a scaly flaky scalp. A friend suggested I try Miracle Whip. I rub it into my scalp and leave it in a couple of hours. It has worked wonders and I now have a flake-free scalp. Any idea why?

A. We checked the ingredients in Miracle Whip. They are: water, soybean oil, vinegar, high fructose corn syrup, sugar, modified food starch, egg yolks, salt, mustard flour, artificial color, potassium sorbate, spice, paprika, natural flavor and dried garlic. We can't imagine why any of these compounds would clear the flakes from your scalp but others have praised Miracle Whip as a good hair conditioner.

Depending on the cause of the scalp / dandruff, vinegar can actually help clear it up.  It can also exacerbate some kinds, thou.

Recipe wise, I just put Adobo in the pasta water.

It's actually a little less viscous than mayo due to the lower fat content.  I know this from professional experience. I also know that Extra Heavy Mayonaisse should be a controlled substance. It's a heart attack in a jar.

I think marmite is slightly more palatable than vegemite.

However, when I was looking up marmite to see if it was made by the same people as vegemite (it's not btw) I discovered a whole bunch of recipes...

http://www.marmite.co.uk/restaurant/menu.html (http://www.marmite.co.uk/restaurant/menu.html)

...which look delicious and might change my mind on marmite.

THEN, I find a lot of vegemite recipes, but, with the exceptions of cutting out my tongue, I don't think there is anything which can salvage vegemite.

http://www.vegemite.com.au/vegemite/page?siteid=vegemite-prd&locale=auen1&PagecRef=653 (http://www.vegemite.com.au/vegemite/page?siteid=vegemite-prd&locale=auen1&PagecRef=653)

I realized last night another "weird" thing we do is sprinkle salt and parmesan on peanut butter crackers.  My youngest son invented this recipe and it isn't bad at all...  Well it's not disgusting.

I eat apple cores.  My wife will hand me hers when she's done with the rest of the apple.

I also eat the whole strawberry, including the green leafy bit on the top (though I do remove the stem).

Though I don't typically myself, my psych prof suggested eating a banana like a watermelon slice rather than the traditional way is a great way to weird people out.

I like cold tea.  Not iced tea - cold tea.  I like warm tea too, but I habitually make a cup of tea and forget about it for quite some time, and then I will happily drink it when I remember I made a cup.  My wife thinks that's weird.

Mayo + a cream salad dressing (ideally a blue cheese dressing) + black pepper makes a great dipping sauce for pizza.

Plain rice with some salad dressing (alt: plum sauce) and a ton of pepper and maybe some spices is a quick and filling food.

I adore sour cream and would eat it on cardboard - can't eat it straight though, that's just Not Right.

Jalapenos and garlic sound win.

There's this crudite/pickle thing people here might be interested in, actually.  It's called turshi and it's Afghan/Iranian.  It's basically pickled veggies, but traditionally it's made with these tiny egglplants, onions, garlic cloves and peppers.

Tursh means sour in Persian, so that's why the name--they use lots of mustard seed.

beet juice?? never heard of that method.  my favorite pickled egg recipes include LOTS of jalapenos and garlic.  i also throw carrots and cauliflower into the brine to pickle along with the eggs.  i had some in minnesota that had cloves and found it quite disgusting.

Really? I had some clove / nutmeg ones recently that were quite good.

i think it was more the element of surprise that ruined it for me.  up until that clove egg, i was under the impression that pickled eggs were all jalapenos and garlic, so when the clove hit, i was like "what the fuck is this?"

I follow.  I've had the same unpleasent experience with bastard Non- New England clam chowders.

They ARE different though.  One of few foods I just CAN'T see pairing with much else.

I'm a mayo person.  haven't tried miracle whip, but I hate cool whip.

Eggless (tofu) egg salad is pretty good.  Though I do LOVE putting things in eggs.  Just the other night I scrambled some with pine nuts, parmesan cheese, asiago cheese, zucchini, and herbs de province.  Frying one up with garlic salt all over it to make a sandwich is another favorite of mine.

For some reason my favorite type of mac n cheese is the stuff from the box (annie's organic though, but I'll do easy mac too).  Plus I HATE bell peppers, and only like tomatoes if they are in a sauce, or somehow liquefied.

On basically everything that I would put a condiment on, if on hand, I prefer salsa or sriracha to catsup or mustard. Salsa fries are so much more kickass than regular.

- piece of chocolate dipped in hummus. not as bad as you think, especially not if you had a few drinks and proclaim that "EVERYTHING IS BETTER WITH HUMMUS".

- bacon+cheese pancakes, with molasses syrup.

- speaking of Brie (or Camembert), that shit would be pretty good with some red jam on toast.

In semi-related "fuck yes I gotta try this sometime" news, my book on molecular gastronomy tells me that if you mix camembert and Vermouth properly, you will get the right amount of fat/water/protein mixture as milk cream and you can whip it into fluffy awesome like whipped cream.

Noice! I add a bit of sugar, personally. I'll have to try the cinnamon thing. Friend of mine tried adding MINT. Ugh, the resulting disaster was godawful. He only survived the lynching because he made superb garlic cheese bread. That and the rope was old and snapped.

No, they just mentioned it can be done, so I guess I need to have enough of both and gradually keep adding one or the other until I find the consistency right.

It might have been sherry instead of vermouth btw, I should look that up, but I can't imagine that makes much of a difference for the chemical process, just the flavour.

That occurred to me, but I wasn't sure.

Serrano peppers are good for a more casual spiciness.  They're not so weak that I fail to notice them, but not so strong that I can't focus on the texture and flavor of the food I'm eating.  When I go spicy, that's pretty much all I can focus on.

I will only eat fries that have been heavily salt and peppered.  If it looks like it's even been on the same plate as some condiment, I don't want em.

Really, I don't put any of the big 3 condiments on anything.  I make an exception on my sandwiches for a spicy brown mustard but that's it.  No ketchup, no mayonnaise (fucking disgusting) no yellow mustard.

I like a lot of black pepper in almost everything.

If it lives in the sea, I will eat it.

I love Tabasco sauce in my beer.  I will kill an entire bottle of the stuff in 1 12 pack.

I cook breakfast bacon with no pants on.  It's the only way I've found to actually make bacon taste BETTER, because I feel like I really worked for it.

I tend to focus on one type of food on my plate and finish it before moving onto the next type. Eg- I'll eat all of the chicken, then vegetables, then the potatoes.

I refuse to eat any sort of meat that was not from a warm-blooded creature. I eat no aquatic life.
Even then, I prefer to limit the species of animal that I eat to cattle, pig, chicken and turkey.

I hate mayonnaise and don't understand why people like it so much.

I prefer vinegar on my fries. I prefer steak fries to other fry types.

I don't like ruffled potato chips, but will eat them with appropriate dips.

I like spicy food and drinks. I will take it to masochistic levels. For example, I like ghost pepper sauce in a shot of tequila.

I like Irish food, but I hate cabbage. I hate corned beef too, but that's not real Irish food anyway, it's New Yorker.

I find the smell of seafood and cabbage to be repugnant enough to make me nauseous.

I'm a vegetarian, but will have nothing to do with mushrooms, eggplant, or tofu (I'm convinced there's no possible way to cook tofu correctly).

I drink yerba mate (http://en.wikipedia.org/wiki/Yerba_mat%C3%A9) because coffee does terrible things to my stomach. Shoe Ears and family refer to it as "horse tea" because it has a grassy element to the flavor.

Mayo belongs in egg and potato salads, but no other foods because it's nasty and I can taste it in anything else.

I grew up eating "goopi", which is deli mustard and mayo mixed and put on top of broccoli. I can taste the mayo now, so I just eat it with mustard.

Pumpkin seeds are the best thing ever.

Like Twid, I tend to eat my food based on types.  Almost always, the meat will be left until last, except in the case of pastas, stir fries and curries, where it will go first.

Just today, I discovered a beefburger, sliced up in a sandwich, with sweet chilli sauce, is quite delicious.

Also, this, though outside of bloody marys I haven't really added spicy to many drinks. I really need to try the tequila w/ the ghost pepper sauce. Also, had some awesome ghost pepper wings from a local place the other week. Face felt like it was melting halfway through and I was thrilled to find a place with actually hot wings. They also had a sauce made with fresh ghost peppers that wasn't quite as hot but had an interesting sweetness to it as well.

I love how white people are super-into telling everyone about food they don't like or can't eat because the taste/texture/smell makes them feel sick.

Also how they are gluten and lactose intolerant and can't have certain vegetables because it makes them gassy

and how they are delicate fragile flowers who must be coddled and pampered like the jewels of the animal kingdom.

Fucking hell. This is not the "foods my picky white ass passes judgement on" thread.

And yes, I just called you white.

Pickiness falls under "habit" and "quirk."

Calling me white is also a statement of fact. Whatever.

Fuck that shit.  The only thing I refuse to eat are roasted tarantulas, and I'd reconsider that if I was starving.

But unless it comes in a curry/pasta/stir-fry, I'm eating the salad first, then the potato and THEN the spider.

I saw how they did that, it was awesome, you grab the tarantula's body with chopsticks and then just dip it into boiling hot oil for a bit, fuck yeah :D

I'd probably dip it in batter first, maybe.

What Twid said. I also don't think there's a problem with having preferences or not liking something because of texture or similar.

On the BBC's Human Planet, the kids roasted them over an open fire.  They looked to have a texture similiar to marshmellow, on the inside.  And crunchy on the outside.

I have, of course, eaten guinea pigs before now.  And horse.  And alpaca.  And crocodile.  And snails.

Never frog legs before though, funnily enough.  I'd like to try them, though I hear they're nothing special.

It's mostly due to the move. A combo of not having located a proper grocery store (I should ask LMNO) and the knowledge that there is a mouse here. I imagine that i'll be eating proper again soon.

Admittedly, I have access to any kind of food I want, so I can afford to be picky. I try not to be a princess about it, though. I don't force other people to accommodate me or the like because it's inconsiderate and rude.

I dunno. I mean, when you really get down to it, what's the difference between a person with an allergy and a diabetic not wanting to eat sugar cause they can't be arsed to produce their own insuline and like to shoot up in front of young impressionable children?

I think Luna needs to realize what possible message she's sending, here.

I'm allergic to shellfish, and Dok had to pull clam chowder out of my hands.

I'm lactose intolerant, and I will occasionally eat ice cream to "regulate" things.

I'm beef intolerant, but I tend to stay away from that, because I don't like rectal bleeding.

The only allergy I really pay attention to is my mold/penicillin, and that's more or less because I don't want to die. This of course, eliminates a fair amount of very tasty cheeses, but I cannot seem to grasp the cheese > death concept.  :?

I'm not picky, I'm DEATH DEFYING.

And FUCK diabetics.  :argh!:

Lies.  I made tofu apple soup, a riff on miso, and it came out GREAT.

Counter-lies. It is literally impossible for tofu to be great.

Thanks for posting that link. I had been meaning to look up what maté is because its constantly mentioned in the fiction of Jorge Luis Borges (http://en.wikipedia.org/wiki/Jorge_Luis_Borges), and your post reminded me.

OK, you have me there. Hyper-processed food is nasty and bad for you, though if you're starving anything tastes pretty damn good. I'm not sure a distaste for nutritionally bankrupt overprocessed food really counts as "picky", though.

Thanks for posting that link. I had been meaning to look up what maté is because its constantly mentioned in the fiction of Jorge Luis Borges (http://en.wikipedia.org/wiki/Jorge_Luis_Borges), and your post reminded me.
'Welcome. It's quite good but the flavor can in, in some cases, depending on where you get it, an acquired taste. Buy it in bulk on Amazon, because stores will charge you an arm and a leg or two for a couple ounces.

What Twid said. I also don't think there's a problem with having preferences or not liking something because of texture or similar.

Of course you don't, cracker. :lulz:
Don't you deal with that sort of thing for a living?

Not anymore! Now my menu consists of two choices: take it or leave it.

And before, when I was subjected to the indignities of running a restaurant kitchen, most of the front of the house staff new better than to come to me with requests based on pickiness as my usual response would be something along the lines of "well if they can't find anything on the fucking menu that they fucking like, maybe they should go the fuck somewhere else!"

This does not apply to actual allergies, I have all of the sensitivity in the world about that and will go way out of my way to be accommodating. But when someone wants this dish but without this or that component because they really just don't like those? Well fuck the fuck you, cocksmoker, either find a dish that your picky ass DOES like or go to fucking Wendy's.

I can understand that, I suppose. I usually just leave the bits I don't like on the plate, myself. More of that not being a princess about what I eat.

That reminds me of my chef at the bistro I worked at.

You have an allergy? He will do whatever he can to give you something tasty without the killing component, because you genuinely want the dish.

You're picky and don't want a certain component because you don't like it? Stop backing up the line and GTFO.

Same, when I was working in a kitchen.  We'd grumble at allergies, but at the end of the day, what can you do?

People just being overly picky, because they're "paying good money" (as opposed to bad money?) and expect to have their every minor whim catered to, on the other hand...  Fuck that shit.  You want the five star treatment, you start paying five star prices.

The only time I made a bigger deal than, "no mushrooms, please" was at the cafeteria at the university where I worked.  They had a stir fry thing, you pick your own food out, hand them the bowl, and they cook it for you.  I got my ooof back (chicken, snow pea pods, baby corncobs, warer chestnuts, I MISS that), and the kid managed to get both mushrooms and shrimp in there.

Fortunately, I had chopsticks, caught the mushrooms (and I can pick them out and be okay, the tiny traces I can cope with), but that's two things that are common to find people with issues about.

Next day, they had a sign up saying that if you have allergies, ask, and they'll use a pan on the big grill.

Well fuck the fuck you, cocksmoker, either find a dish that your picky ass DOES like or go to fucking Wendy's.

BLESS YOU, SIR.

My best friend is deathly allergic to certain tree nuts, and all bivalves. She once went into anaphylactic shock at work because the "peanuts" sprinkled on the Thai noodles in the cafeteria were actually chopped mixed nuts. Her face and tongue swelled up after kissing her boyfriend, who had hours before had a cookie that had walnuts in it. It's very, very important that she not be exposed to tree nuts. Luckily, she can, and will, eat just about anything else that comes her way, and is damn fucking grateful for it.

I have another friend who is a Celiac, and can't have any wheat at all or his insides will start eating themselves.

Then there is the LEGIONS of friends who have recently jumped on the gluten-free and food allergy bandwagon because they found an itchy spot or they feel sluggish after too much pasta, who give themselves permission to "cheat" if they want something badly enough, but otherwise make a huge deal about all the things they "can't" eat.

Oh, so I have to make gravy with rice flour, so that you can save your daily gluten allotment for a cookie? Fuck you!

These people really chap my hide. Because they give the world at large the impression that someone who is seriously allergic ("cheating" at all would make either of my aforementioned friends seriously ill, if not dead) can still just have a little as long as they don't notice it. Just a LITTLE pecan flour on the chicken won't hurt, right?

I have another friend who is, sorrow of sorrows, allergic to onions. Needless to say, people assume that she just doesn't like them, but she really just can't have them at all because they make her very unpleasantly sick. She solves this problem, mostly, by not eating anywhere but at home, and has never once made an issue about it.

The people who don't like this and that, and who have rules about what's "gross" and what should "never be done" because they think a food is disgusting, make me want to go into a whirlwind slap-fest. It's one thing if they apply their picky picky princess standards to themselves, but the ones who go about judging and ewwwwing at what other people eat truly make me want to punch a bitch in the face. It's not, actually, cute to be a brat.

I had them once, but it was at a Chinese restaurant and fried, so like most fried foods, it mostly tasted like batter, or the cliche "tastes like chicken". I'd be interested to try it prepared otherwise, but from what I could sense (barely) it didn't seem to have much of it's own flavor

I will eat the same thing almost every meal for weeks.

I ate green bean casserole for the last month or so. Now I'm one week into spaghetti.

Once, I subsisted for an entire summer entirely on corn dogs and Citrucel.

IMO blueberry's even better.

Also goat cheese + some sort of jam or honey + tiny sprinkly of thyme or rosemary + toasted = NOICE

Quirky food habit. Ummm I eat raw dough sometimes? When I make pizza dough etc. I once had the yeast make me burp all day :P

Toast bread + mayo + wasabi = yum. Got this from my gf though.

When I really want a snack and have nothing else, toast bread + butter + sriracha = MMM

I once dipped a big chunk of chocolate in my hummus, it was not bad. But I was a bit drunk and I was trying to prove my hummus is so good it goes with everything.

Most things I eat are things I'd serve to others as well, so they're not exactly quirky habits.

I wouldn't wish my shitty food allergies on anyone. Who the fuck WANTS to not be able to eat things because they want to be fucking food hipsters? No, fuck that.

I want a cheeseburger. I want to EAT THE HELL out of a cheeseburger, and I CAN'T. Not unless it's made out of turkey or vegetable matter. Goddamnit, I want dead cow on my bun, and I CAN'T HAVE IT.

I want a delicious bowl of clam chowder on the beach, and I CAN'T.

I however, don't want a chunk of Stilton. Ya'll can keep that. My cousin almost tried to kill me at her wedding by putting Gorgonzola on the salad that was served. I was so mad, I wanted that salad. :( I'm so glad I read the menu before I dug in thinking it was feta. Good lord, that wouldn't have been fun.

When I was in my 20's, I worked in a bookstore. One of my co-workers was a Hawaiian girl. Many of our co-workers seemed to enjoy making commentary on what other people were eating, declaring it "gross" and saying they could never eat it, or, if they deemed it "good", asking if they could have some (!). I loved the shit out of Wendy because every time it happened she would wrinkle her nose, lean over to me, and stage-whisper "fucking haoles!"

Hungarians don't eat "food".  They eat the worst bits of the animal, ground into paste so that they can still eat after wearing their teeth down gnawing on animal skins.  And cabbage.  Cabbage is not food.

Saute apples and onions together.

Yes. Really.

Confirmed.

I like them sauteed with curry.

Thirded.

Not eccentric, but I put gotchu jang (korean hot sauce - like jalapeno sauce, but fermented or a bit sour) in soups and rice.  Works plain as a dip too, or you can mix it with equal parts mayo, ketchup, soy sauce, sesame oil and a bit of ginger and garlic to make korean take-away chicken dipping sauce.  Is nommy and kinda funky.

I've recently decided that, if any recipe you're preparing calls for lemon juice, and you have a choice between bottled lemon juice, and powdered yellow gatorade, use the gatorade.

It worked for some hummus I made once.

Also, bottled lemon juice is teh sukkk.

If you have powdered lemonade, that would probably be even better.

Some day I need to test my recipe for hillbilly hummus: peanut butter, pinto beans, and mountain dew.

No.

pinto beans = chickpeas

peanut butter = tahini

mountain dew = lemon juice

mebby thow in some wild onions out the yard for garlic.

By "test it" I mean  to see how awful it is.

I read about using peanutbutter as a tahin substitute. I did it that way with the first hummus I made, it's really not the same.

It's interesting how sweet, sour and salt flavourings/condiments are quite well represented in the kitchen, but "bitter" is much less common.

There's tahin, hops, certain kinds of soy sauce (if they're not too salty or sweet) ... anything else? I'm always looking for that :) Cause it's my belief that any good sauce or dish or whatever should have at least a bit of these four basic flavours, to balance out a bit.

Emo Howard, I don't think you can sub pinto beans for chick peas. Since it's the majority of the hummus mass, you're not going to get very close, I'm afraid.

Maybe if you mix em up with kapucijners ("marrowfat peas", though I'm not 100% sure they're the same), they taste a bit like a mix in between peas and beans. You'd get a greenish tint in your hummus, though :)

Hm. That's not a bad idea actually, maybe I'll dump some thawed frozen peas into my next (proper) hummus, see what it does :) It would probably make the texture a bit smoother, the taste not affected much if I don't add too many, and hopefully a funky slightly greenish tiny :)

Oh and Howard, don't forget some hot sauce (ok peppers, but you're being ghetto) and shitloads of olive oil plus either water or the liquid from the canned beans, you need some of both to get the right creamy consistency. I wouldn't use too much Mt Dew :)

Wild onions, are they green onions? That's the most fancy quality ingredients in the whole recipe, so def chop those up fine and go for it :) If they're not green stems, but morel like white or red regular onion bulbs, chop them up REALLY fine, and soak em for 30-60 min in a small amount of vinegar (or Mt Dew or lemon juice) to get the sharpest "edge" off, that way you can use them raw in the mix.

You can make a tasty dip out of black beans and garlic. Doesn't taste a lot like hummus though. Chickpeas really do have a distinctive flavor.

Sorry you're trapped in Iowa or wherever. Seriously, there's more going on elsewhere, culinarily speaking.
Title: Re: Add your eccentric food habits/tips/quirks here!
Post by: Triple Zero on November 01, 2011, 11:53:18 PM
If you manage to find dried chick peas, you can get a shitload for very cheap, and they keep forever and they're quite nutricious so you'll be ready when the apocalypse comes.

It just takes like five hours (or overnight) to soak them, and then another hour (maybe two?) to boil them to get them ready for hummussication.

...

And then still, the canned ones are mushier, and create a slightly more optimal creamy consistency.

Canned ones can be found for fucking cheap too, btw.

I've made hummus with dried chick peas several times, but I've never tried it with canned. I'll have to give that a shot.

Dried chickpeas are really easy to find around here. I don't know if that's because of the relatively large Middle Eastern population, or if that's just how it is everywhere.

True. I'm lucky with an Asian supermarket real close.

Can you find sesame seeds? If you roast them and grind them, you got Tahini.

Usually I prepare a sludge of olive oil, lemon juice, roasted sesame seeds, garlic and roasted cumin, pureed with a stick-blender.

Also, sesame seeds are nice in all sorts of dishes, from salads to noodles to meat, while I found Tahin only really to be useful for Hummus :)

Suppose it depends. The regular grocery store near me has 1 or 2 brands of Tahini - near the deli/specialty cheeses and/or near the condiments/jarred pickles etc.

Obviously every store's set up diffrently and it depends on the region, but it's possible it's hiding somewhere there

That's actually pretty common. I've worked at several pizzerias that had a pizza that used ranch dressing as the sauce, usually with some chopped garlic added in.

Used to do one as the daily special at my pizzeria once in a while that was garlic ranch sauce, mozz-cheddar mix for the cheese, grilled chicken, bacon, caramelized onions, roasted red peppers, and jalapenos. Good shit.
