Title: Tonights menu
Post by: Adios on June 03, 2010, 09:08:01 PM
Ok everybody, share what's for dinner.

Sandwiches with mayo, lettuce, cheese, ham and fried eggs. I love egg sandwiches.

It is a mystery.  My work said they'd provide "something" because the cafeteria is closed today.

I threw a small pork roast in the crock pot with some onion and garlic and a beer.  We'll either shred it and add bbq sauce or I'll throw some potatoes in the oven to bake and steam something green...

Diner will be fruit, peanut butter, ice cream, and whatever else seems good to toss in the blender, I'm going to be out late at practice.

Probably either boxed soup (which I will dress up with onions and such) or boxed Indian food (because Trader Joe's does surprisingly well in that department and I'm lazy).

I always had trouble finding an appetite after working in a restaurant all day, looking at and smelling nothing but food.......never could eat after that.

Tonight will be beer and Pizza.

Tonight I will be having maybe some grilled chicken if it has defrosted, a potato salad with spring onions, bacon, spinach, cheese and wholegrain mustard Mayo.

Also I have a spinach salad with mozzarella, tomatoes, salami and a pesto/balsamic dressing.

I have been trying to use up all my fresh food and practise my salad fu for next weekend, and I have a tendency to make stuff in bulk cos if I get down and can't be fucked to cook I already batched a load of stuff up on a better day previously.

Gets repetitive but beats starving.

I didn't do the pot roast yesterday, so I'm doing it today.

Starting with about a 3-lb roast, I salted and peppered it, then dredged it in flour and browned both sides in a cast-iron skillet and plenty of oil. Chopped an onion and put it in the bottom of a small dutch oven, poured in some wine and a bit of broth, added sprigs of parsley, sage, rosemary, and thyme. (Yes, they really are perfect accompaniments for roast beef; there's a reason they're traditional!) stuck the roast in, covered it, and it's in the oven at 300 for three hours. Easiest recipe ever! Garlic mashed potatoes and roasted broccoli forthwith.

My blood sugar dropped before I went shopping so I walked out of whole foods with:

turkey meatloaf
tiny container of curry chicken salad, potato salad
red pepper jelly
brie
4 yr gouda
a wad of parm-regg
some weird chev i can't pronunce
a soda
mixed olives from the bar

My husband asked if I was stoned.
It really looked like I could have been from my selection.

cheese and olives were good though, specially with the jelly.
the other stuff sucked bad.

Luckily, daddy paid.

you must mean something else than what "steamers" mean on the east coast, unless the mississippi river is suddenly populated with clams?
Title: Re: Tonights menu
Post by: Triple Zero on June 08, 2010, 05:32:11 PM
bell peppers, zuccini, onion and garlic, stir-fried with some sour cream and "moroccan spices" my parents brought from their trip to morocco. served with rice cooked in kurkuma (yellow-root) and a "valess schnitzel" [valess is the best meat substitute I know, it actually manages to taste and feel like chicken].

i cut up everything, mixed the onion and garlic and chilli pepper with olive oil in the pan, covered it, and now waiting for my gf to come home.

I couldn't find any nice looking (or smelling) clams.  I am stopping on the way home to see if they got in any fresh ones or if the mussels came in.  So no, not a NE steamer, just my home kitchen version....

And just for the record, I wouldn't eat anything from the Mississippi River for love nor money...  The oily part of the gulf is cleaner than that river, it is gross and it stinks really really bad in the summer.   EWWWW.

Florida "Steamers" are corn, potatoes, stone crab claws, shrimp, either grouper or red fish, sometimes you'll see other shellfish, but usually no, and they will add something tropical, mango, pineapple, chilis etc....  Starfruit adds an odd flavor, I don't recommend it!  :lulz:

ahh...so "steamer" is the name of the dish itself in this instance? It sounds delicious whatever you call it. In New England, "steamer" refers to a specific type of clam, or to the thing you leave in the sink in the upstairs bathroom during the party at some guy's house who you don't really like that much.

I don't really care much for steamers (the clam), so I think I'll adopt your version for the sake of confusing people.

I think Suu, being from FLA, is probably referring to stone crab claws. Stone crab claws are delicious, but they harvest them by ripping the claw off of the crab and throwing the crab back, since it will grow a new claw.

Fuck sustainability, I want to know that the animal I'm consuming a piece of is totally DEAD and will not someday be mutated by gamma rays and come looking for revenge.

I just made the same mistake with a pizza the other night.

Luckily pizza is fairly eatable even when it's browned. Did a number on the roof of our mouths though.

That's odd.  Our oven's from around then too and it rules for pizza.

Try baking the pizza in cast iron.  It regulates heat pretty evenly, and your dough will never once stick to the pan.

Just be sure to pre heat the pan before you put the pizza in.

Our knobs are falling off, I think it might have something to do with that.

I'll keep my eyes peeled for a cheap but gigantic cast iron pan.

I got a 12" skillet at Freddy's for $20 a while back.

Believe it or not, the best place to get a cheap cast iron skillet is... Wal Mart.
I know, I know. I'd rather put both my hands into a meat grinder than go into that store as well, but I got a 16" lodge skillet for some 20 bucks or so.

Also the fondue went well.
Nobody lost an eye, got stabbed in the hand or destroyed their flesh with molten cheese and/or chocolate.

It was filling. I'm not gonna say it was delicious cause well, it's fucking fondue, from a restaurant, so meh.

That's odd.  Our oven's from around then too and it rules for pizza.

Try baking the pizza in cast iron.  It regulates heat pretty evenly, and your dough will never once stick to the pan.

Just be sure to pre heat the pan before you put the pizza in.

Alton Brown said to use a big slab of stone which you keep always in the oven.

I might try that.

I bought unfinished tile to use for baking.  I can keep them stacked when not in use and spread out however many I need when I do use them.  They work really well.  Saw them do that on an old "Baking with Julia" episode  :lulz:

They re-radiate heat in an even manner.  It helps if your oven has "hot spots" or if it heats unevenly.

This kind of because I don't know if my oven has hot spots, since I started using the tiles I use them all the time for baking.  While everything I bake may not turn out to taste the way I wanted it sure as hell is pretty

Seriously though, I wouldn't bake without them.

You should put a sprinkle of cornmeal on the stone to prevent sticking.  After a while it will "season" kind of like a cast iron pan and will be pretty much non-stick.

I make a LOT of tasty salads.  I mean...A LOT.  And I cannot abide them as a main meal source for more than one meal at a time.  Side salad, ok.  But salad-as-a-meal, not so much.  Of course, there are enough variations of salad that I can be TEMPTED to do a 2-meals-in-a-row salad binge, especially when it's hella hot outside.

Oh shit I have to think about it

I chopped an onion and browned it with some red peppers in butter, then added chicken stock and red lentils. I dumped in some yellow indian curry powder and salt, tasted, more salt. Simmered for a bit until kind of porridge-consistency, added chopped cauliflower and spinach and juice from a whole lemon. Turned off the heat and let the heat from the lentils steam the vegetables.

The rice: add a bit of garlic, salt, turmeric, and fennel seeds to the water, add basmati rice, bring up to temp. steam for 15 minutes then turn off and let sit 15 more. Now the curry is ready to serve over the rice; eat eat eat!

I just found out that putting frozen salmon filet in a bowl with brine and nuking it for 2 minutes at 800W in the microwave (YEAH I FUCKING BOUGHT A MICROWAVE TWO WEEKS AGO AND I'M SRSLY LOVIGN THE FUCK OUT OF IT SUCH A BRILLIANT MACHINE TO EASILY MAKE THINGS WARM WITHOUT BURNING THEM WHOOOOOOO) ... that that is too much and my salmon is now slightly cooked. I was just trying to speed up the defrosting a bit. Next time I'll just do one minute and let it sit for a while. After all it needs to soak up the brine too.

I had an amazing Red Fox burger and three shots of bourbon.

This is my last bourbon for a while; me, my FBF, and Mr. Language are giving up drinking for September, except for the two benefits we're attending this month. MAYBE the screening party, too, if it will make it more tolerable. I won't tell you about the screening yet; I will only say that it sounds horrific beyond belief.

This wasn't tonight, it was Friday.  Anniversary.

Went to Menton, a new place in Boston.  It was the single most elegant and refined meal of my life.  Seven-course chef's tasting menu.  Each dish, each bite, had complex layers of flavor, and the wine evolved over the course of the night, matching the dishes perfectly.

At the end of the night, the check came to $700.  For two people.

And you know what?  I may be eating potatoes for the next three weeks, but it was fucking worth it.

Well, I don't have an oven, but the other day I tried making a calzone in a pan and it kinda worked.

Just roll the dough out, put it in a hot pan. Flip it after a couple of minutes, and put your toppings on it.

Then flip it in half and cook both sides.

The trick is not cooking it too much before you flip it in half.

We bought a new stock pot yesterday, so tonight's dinner is vegetable beef soup w/fire-roasted tomatoes. Fresh rolls from bakery to go with it.

Yeah, it's the easiest thing ever. You can leave the breasts whole but I prefer them cubed, and you just literally mix the chicken with some condensed cream of ____ soup (about one can per large breast), put it in a casserole dish (Pyrex is fine) and bake at 350 for about 30-40 minutes, depending on how big it is. I'd say half an hour for one breast, 40 minutes for two. While it's baking you make your white rice and any veggies you want (I'm very partial to lima beans!) and then when it's done you spoon it over the rice and dump a handful of grated cheese on top. It's SO good! It's like being little and eating at Grandma's house. If your Grandma is a Mormon from Utah.

Tonight is hominy, tomato and chicken casserole.  My comfort food!

Gonna want the recipe on that one.  I'm a sucker for hominy.

Hominy-Tomato-Chicken Casserole

figure ¼  can canned whole tomatos crushed per person.

One chicken breast per person (two if really small or large eaters) - I'm using boneless tonight!

One large onion medium dice for every 4 chicken breasts.

½ to 1 can of hominy per person (this is the star haha) I do a can per serving.

1-3 cloves of garlic (depending on taste)

Pepper of your choice.  I found some gorgeous fresnos at the at the market and used one of those chopped fine.

I like parsley with this.  I've seen it done with cilantro and while I love cilantro it isn't a taste I like with the hominy.  Chopped.

White wine

Salt and pepper to taste

EVOO

Cheese of your choice.  Tonights cheese is an herbed chevre that was on sale.  I've used a bunch of different types.  In fact bleu cheese with this is amazing but go real light on the peppers as they over power a lot.  I do not like gouda in this nor any of the really stinky cheeses.  Swiss is actually nice and I have used derby to nice compliments.

I quick sear the chicken in the same pan I use in the oven, remember this pan needs to eventually hold all of the above ingredients.  When I turn the breasts over I add the garlic (I used 2 cloves for 6 breasts).  Once nicely browned, remove from heat and cover with the tomatoes and a nice dash of white wine.  Cover and put in a 350 oven for 15 minutes.

While in oven, drain your hominy.  I don't rinse mine but you can.  In a pan in a touch of butter quick fry the hominy and onions with a touch of salt and pepper.  Right about the time your oven timer goes off, your onions should be just past translucent and getting a touch of color. Remove from stove and put in a bowl, quickly deglaze the pan with a couple tablespoons of the wine. Remove the pan from the oven and turn your oven down to 300.  Add all of the hominy and onions and the chopped peppers to the pan, give everything a quick readjustment, drizzle with the deglazed wine from your skillet, cover and put back in the oven.  Now this is the tricky part as you really have to base this on how thick your chicken is.  Leave it in the oven until you are happy with the doneness of your chicken, you know what temps and such.  Remove from the oven and cover with the shredded, crumbled or diced cheese of your choice.  Let this sit for a good 10 minutes to let the cheese get a bit melty and the flavors combine. I sprinkle the parsley on with the cheese.  If you use a hard cheese, allow a few minutes for this to go back into the oven!

I serve family style.  A nice salad or some green veg on the side.  Tonight is brussel sprout leaves quick fried in OO with a touch of garlic, salt and then tossed with pine nuts.

Let me know how you like this, I know a lot of people who dislike hominy so I rarely share my recipes for it!

I've made a hominy casserole before sans chicken, but with a layer or two of soft corn tortillas.  This one sounds way better.

Tonight I'll be having the pasta dish I made a few days ago.  Simple.  I don't know what it's called when you slice onions thin and leave them covered in a skillet for like an hour, but it's that, with chopped spinach, black pepper, sage, parmesan, and almost a stick of melted butter tossed with linguine.

I once had a recipe similar to mine that used pork and instead of tomatos they used a grapefruit and orange combination.  It was spectacular.  I have never been able to recreate that recipe.

I gotta try this.  I put some homemade (not mine) zucchini and sweet pickle relish on a peanut butter sandwhich and was totally underwhelmed.  NOT enough FLAVOR.  So now I need a Mach II attempt.  Bacon and honey might just do it.  Banana must be to mellow it out or something.

TODAY I crockpotted (ha! is that a VERB??) some chicken and put green pepper and onion slices on top, added half a can of shitty beer (waste not, want not, yo), then poured some thai bbq sauce over that.  We'll see what happens.

It smells just like Memere used to make, but I haven't had any yet.  Mashed potatoes and crusty bread to go with it.

Left-over lasagna, probably. Which is good, because I make bitchin' lasagna.

I'm thinking lamb and lentil stew.  Or something with lamb as I really need to cook it tonight.  I might run it thru the processor with some pork and mix with ground beef and make gyro burgers....  I just hate to grind up good lamb...

Something with lamb   :lulz:

That sounds pretty good! I'll have to figure out a replacement for teh ham, but I think I might try that.

Delicious, delicious pizza from a wonderful local chain. Red pepper, artichoke hearts, and red onion.

Just leave the ham out, it'll be fine. Nothing ruins food like vegetarian meat replacements. Mince a little fresh basil or parsley and stir it in at the very end if you want to get fancy.

You can leave the cream out too, and it'll be a different soup but still taste good.

Ground beef mixed with minced pepperincini rings and minced jalapenos. Add Worchestershire sauce and a splash of Teryaki sauce.
Patty and fry, just before removing from heat cover in shredded pepper-jack cheese.

Plate and add salsa, horseradish mustard and sour cream.

Chicken Adobo over rice with bread I baked this morning.

Since I bought and cooked a whole chicken I decided to eat the liver for lunch, as I've never had it before.  I sauteed it up with butter and sage along with some other carcass scraps and ate it on a slice of the bread.
