I'll have to ask my mom what she used to do to cut her hard candy when she made it.  I think she used a mold, iirc.

Peanut brittle is often just put on a cookie sheet to harden and then shattered to make the pieces, same with peppermint bark.  I imagine most hard candies can be finished this way if you wanted.
