I chopped an onion and browned it with some red peppers in butter, then added chicken stock and red lentils. I dumped in some yellow indian curry powder and salt, tasted, more salt. Simmered for a bit until kind of porridge-consistency, added chopped cauliflower and spinach and juice from a whole lemon. Turned off the heat and let the heat from the lentils steam the vegetables.

Oh, it's very mild, which I do for the youngest, non-spice-tolerating child. The rest of us add crushed chilies on top before eating.

I'm sorry all my measurements are "some". I was shown how to make it using the "some" method, and I rarely measure anything. Next time I make it I'll pay attention to proportions and work out an actual recipe!

My housemate said it was the best homemade curry he's ever had. He has yet to experience my cooking in depth, though.

My husband makes this dish, very similar to yours.  I'll have to ask him what variations he makes from your recipe.

I'm thinking tonight'll be fish tacos.  I'll find out when my husband's getting home from visiting his dad and see if we can fry some fish up.  He loves that above all, and it's a good Dad's Day Dish.

(...plus I'm sorta craving Mexican food...)

Steak tonight for our anniversary dinner. Friday night we went to the Three Fires Restaurant in the casino. I had fillet and Mrs. Haw has prime rib. I has a side if sweet potato mash that was directly from heaven. Mrs. Hawk had green chili mac n cheese. Our other side was a house salad. We also had a bottle of La Crema Pinot Noir wine. The meal was indeed top drawer all the way and the wine was fabulous.
