I make a salad that is somewhat similar to this.  It uses cucumber, onion, red apple chunks or red grapes, poblano peppers, white wine balsamic and EVOO.

It has that sweet, spicy, crunchy thing going on.

It's like a variant of salsa.  Yum.

Wow, that just gave me an idea  :lulz:

Bake up some corn tortillas (maybe flour) with a touch of cinnamon (no sugar) and chop everything smaller and use it as a dip.....

Well, mangos put together with avocado and lime with cilantro (and a dash of salt!) makes an awesome salsa--so why not?

I love cucumber salads!

I sometimes do a  Korean dish of cucumbers, thinly sliced yellow onion (soaked in cold water first to tone down the assertiveness), and toasted sesame seeds dressed with sweet- and-spicy chili paste and rice vinegar. It's called oi muchim, for reference.
