So yeaNicks is a little flashy, true, always can be installed on someone's else's computer however.  The man himself taught in http://en.wikipedia.org/wiki/SuperCollider, no fancy interface, perhaps more what may be considered "hardcore"

And then there's the infinitely portable http://en.wikipedia.org/wiki/Pure_Data

Real low-level stuff.  PD is particularly nice to interface with external devices, though I never really had the patience for it.  And supercollider is awesome, although I was perhaps a bit too excited when I finally got it to play what could otherwise be called quasi "music".
