highest per capita in the nation.  And, although we certainly do have a disproportionate amount of that greatest ambrosia known as Texmex, we have every known variety of cuisine easily within rascal scooter range of every citizen.

For certain.  We're a veritable Mecca of cuisine, fuck all knows why.  But hey, who wants to look a gifthorse in the mouth?

within Rascal Scooter distance, i know of 3 Arabic Restaurants. (Narah Cafe, Al Hamra restaurant, Beirut Rock Cafe)
and although El Tumi (peruvian Restaurant is a bit over 10 miles away from me right now), there's a latin fusion place down the street that has some peruvian stuff. (i cant remember what it's called.)

??? Why ??? Most Tex-mex is just a take off on mexican which is actually very very healthy.

It's my understanding that the "Tex" part of it holds the majority of the fats.  The "Mex" part uses a lot of lard though.  Which could be substituted with EVOO, I suppose.

If you had the inclination, you could research traditional Mexican dishes, that use spices and herbs for flavor, rather than salt and fats.
