Chaos theory is about the hidden disorder in order and the hidden order in disorder.  A few examples of patterns that can be explained with Chaos.

1  Weather patterns, I bet none of you are suprised by that.

2  The drip of a faucet.

3  Population distributions.  Especially when you have a predator and prey relationship.  This was one of the first things to be explained by Chaos.  I think it was coyotes and rabbits, which is really appropriate.  They couldn't find a pattern until they used Chaos, fractals and imaginary numbers.  A bad winter or good summer can make things stop or go crazy.
