Title: PORK SHOULDER!!!!!!!!!!!!!!!
Post by: Suu on August 17, 2007, 06:26:04 PM
Puerto Rican Pork Shoulder...IT'S WHAT YUO CRAVE!!!!!

The official Mr. Suu recipe:

1. Kill a pig

2. Cut off the shoulder (hence pork shoulder)...Leave the skin on. You can cube it if you want and fry it in a pan (instant delicious heart attack though), or bake it like we do.

Stuff you need:

Black pepper
Sazon con Achiote
Adobo
Vinegar
Splash of salt.
FRESH GARLIC.

Season with everything to taste. Let marinade in fridge overnight or at least 3 hours.

Cook at 350-400 degrees. Usually takes a couple of hours depending on the size of the fucking pig you killed.

Eat and enjoy with your favorite Boricua side dishes such as rice and plantains.

Edited: I have no idea how the fuck I missed garlic in that.

Stop lying.

I don't see any mention of your sister.

Well, the original recipe he sent me was this:

Quoterecipe

need

1 man
1 woman
1 bed (optional)
1 sister (also optional but offers considerable spice)

Should probably be noted that the "sister" should be related to the woman.

Otherwise, it's a little TOO spicy.

Are you inclined toward the inclusion of a nun?

For those who prefer whitebread, it should at least be someone's sister.

Tell me, does this turn out like a pork roast rather than a ham roast? Because I absolutly cant stand cured pork after my trip to europe. All they eat over there is ham, ham and more ham. Blegh.

Roasted Pork Shoulder usually tastes nothing like ham.

Though the best way to roast it (specially if the skin is on it) is via a spit over a wood fire. But I usually only get away with that when I'm camping.

what's wrong with ham?

.. unless you're talking about the water-injected, actually-only-75%-meat supermarket "ham"

also depends heavily on where you are. anything starting from austria/czech republic and going east = good, most other places you have to be a bit more careful to get quality

i should really check out the muslim halal butchers over here, something about the fact that they do slaughtering in a traditional kind of way, makes me think the meat will be of better quality as well .. i have no idea about the prices though

Also, WTF is with eating cold cut sandwiches for breakfast?!

i hardly ever eat sweet things on my bread, these days

though the amount of times i heard the word "nutella" pass on this board, and its many many uses will probably push me to buy some in the near future :) [probably only to rot away in my cupboard, but still]

Us Americans are known to make things into a gelatinous matter to spread on bread.

This includes fruit, peanuts, hazelnuts, and marshmallows.
Title: Re: PORK SHOULDER!!!!!!!!!!!!!!!

i think that of the above, only fluff is an american invention

that shit = horrible (IMO) it's like 169% sugar
Title: Re: PORK SHOULDER!!!!!!!!!!!!!!!
Post by: Suu on August 18, 2007, 05:24:18 PM
My gelatinous matter, I mean that 90% of what we have on the market isn't REAL fruit and nuts. That or we add a ridiculous amount of sugar to everything. I think we even add MORE sugar to the already sugary Fluff. I hate that shit. My sister bought a jar the other day.

*gets organic peanut butter because it's amazing and even eats the crunchy kind by the fucking spoonful!*

Yeah, cold slices of meat and cheese on bread for breakfast, what is with that? And cucumbers? Srsly, you people have weird breakfast food. And ham in EVERYTHING. Especially in polland. You couldn't eat a meal without them trying to stuff ham in it somewhere. Especially in soups. And I HATE ham in soup. Ruins a perfectly good soup if you ask me.

The beer was good though. And good sausages. I even didn't mind the vinegarizing so much.

The states is really the only region that pushes the 'traditional' breakfast foods. It doesn't necessarily matter WHAT you eat to break the fast.

early in the morning i usually can't stand the thought of eating something (i think i could train this) so usually i just eat the most tastiest things evar, or i wait until i get hungry at 11. and some fresh slices of bread with cheese ham and cucumber (and/or gherkins) are quite tasty IMO.

hey Suu, you were talking about blenders in the other thread. how about you give up on the organic peanutbutter and just take a few bags of the cheapest peeled peanuts you can find (wash the salt off first) and throw them in the blender together with a few spoons of (sunflower) oil. add a bit of sugar (or syrup) and/or salt to taste. that's how you make peanutbutter.
then get creative and add some other nuts (cashews, pistachios), some chillis, a bit of soy sauce, or maybe coconut cream .. umm possibly even bits of chocolate if you want that snickers-taste.

Trip0, do get nutella! It's delicious. It's chocolate and hazelnut spread. I used to spread it on a slab of baguette for breakfast in Paris.

That is what I miss most about Paris--food that wasn't stuffed full of sugar. In order to get stuff that isn't 90% sugar in the US, I have to spend extra money for "organic" and "health food." It is my personal goal to cut as much high-fructose corn syrup out of my diet as possible, but it's really hard. Random shit has it in there! Why?! I don't get it!

Can't I support farmers by eating fruits and vegetables and REAL meat, instead of processed crap?

Eating Doritos is not really supporting farmers, at least not in my book.

I'm sure it somehow is, but I refuse to believe it.

we got a lot of sugar in things here as well. although 90% is rather excessive.

heh, you know how there's laws against calling certain food certain names if they ingredients don't have the right percentage of whatever?

a lot of supermarkets sell "jam" that contains more fruit and less sugar, but they have to call it "extra-jam" because it doesn't have enough sugar to be called proper jam lol :)

The hazelnut flavor is faint (but I prefer it that way as I don't like most nuts). If you take a lick of nutella and then a lick of straight chocolate, you'll be able to tell the difference.

As for the "extra-jam"--that's hilarious!

Cold steak can be good. Like, roast beef. I've never tried to make steak sherbet, but now I'm strangely interested.
And I'd prefer a pure hazelnut spread to nutella as I don't like chocolate. Hazelnut butter = win though.

And High Fructose Corn Syrup is not sugar. Real sugar, from sugar cane, is tariffed very, very heavily. It's not profitable to use it in foods in the US. So everyone uses HFCS instead. I live in southern California, so I can get Mexican Coke sometimes, that's made with actual sugar. Much better than the American HFCS crap.

I need to get my friend in here, makes things out of pork that are fucking unbelievable. I mean people actually refuse to believe that he made it until they taste it, because he makes things like ham rice-crispie treats and bacon brittle.

Here is my pork roast recipe reposted from the Richard Nixon thread:

Pork shoulder is different from other cuts because of the way the fat and flesh are so peculiarly layered, like meat filo. It makes the best roast, hands-down. I like to braise it in boiling water with salt and curry before drenching it in bourbon and cracked pepper, and slow-roasting it at 275 in a covered cast-iron pan with onions and potatoes. Check it halfway through roasting and dump a cup of beer on it. Add BBQ sauce or don't, either way it's nirvana in your mouth.

I think food everywhere is pretty full of sugar these days, not just in America. When I was fifteen I was in Belgium for about a week for a rowing competition, the breackfast in the hotel we were staying was continental European, what BMW hated so much, so we got fruit and stuff for breakfast everyday after the first one and just had bread and jam or honey with it, by the time I got back to Ireland after the week, I think it was rice crispies were the only cereal I could eat for ages, the others were just way too sugary.

I usually find the Germanic countries and Eastern Europe are more into their savoury than sweet food.  But yeah, I know what you mean about Belgium and their bloody fruit at breakfast obsession.  Orange juice and apple, sure.  But they go totally overboard.
