Title: baked apples
Post by: Dysnomia on April 25, 2008, 02:00:08 AM
ECH, have you ever tried soaking some apples in cinnamon/sugar water (perhaps with some small holes so they will absorb the c/s water more easily?), then baking them in the oven?  I was thinking about trying out something like that, maybe to bring to work for the staff, but I'm not sure how to go about it, or if it would even work.

Cinnamon-soaked water won't penetrate the apple, but I bet alcohol would.

Would it all bake off?  I know normally adding wine, etc. to food normally does, but since I'd be taking it to work I don't want to make all the teachers tipsy halfway through the day.  But then again...it is the end of the year...wink

if it does, what kind would you suggest?

have you tried coring the apples and filling the holes w/ cinnamon, sugar and a wee bit of flour (to thicken) then baking at 350 till soft and maybe drizzling on a little caramel (not the shit in the jar, the real stuff)

??

This is what I do:

Core the apple, put a dollop of butter in and then fill the rest with sugar and cinnamon and nutmeg.  Bake until fork easily.

Serve with fresh whipped cream (not the canned, the REAL shit).  Or vanilla ice cream.

Very yummy.  Very simple.

No, it would not bake off completely, so I would second (or third or fourth) Squidling's suggestion.

i don't have a set recipe
i read it in like 7th grade

but you could do just like Jenne or combine hers and mine like so:

6 to 8 apples
1 stick butter (ok half or less, but you should always have like 12 sticks anyway)
3/4 c brown sugar
1 T cinnamon
1 tsp nutmeg
maybe some allspice? ey? just a pinch, why not?
1 T flour

Core the apples, place on cookie sheet lined w/ parchment (NOT WAX) paper
put tab of butter at bottom of hole.
mix other crap together and fill holes to the top.
bake at 350F till tender

drizzle w/ caramel or top w/ whipped cream, hell maybe even chocolate.

or just deep fry the whole damn thing, gain 400lbs and move to the south (no don't, think of your arteries)

this is not an exact recipe. it is a bastardized combination of both mine and Jenne's (cause i liked hers too)

TITCM

It's not food unless it's been battered and deep fried.

Though, in the UK, you have to go NORTH for that shit. No one deep fries things that shouldn't be deep fried like the Scots.

Cinnamon Schnapps.

I soak mine in cinnamon schnapps before I bake them, then basically follow CS's recipe except I add pecans.

Another thing you can do is steam the cored apples in schnapps and water until tender, but not falling apart.
Remove, pat dry and stuff with the sugar, spices and pecans.  Wrap in a piece of pie dough (rolled thin) or phyllo each dotted with a touch of butter (MUST use real) Cut slits for venting and bake until nicele brown.  In the last 3-5 minutes of baking you can sprinkle the outside of the dough with more brown sugar or wait and do like Jenne said and drizzle with caramel.

Hmm, I think I saw a recipe for this sort of thing in one of the Parent's magazines we get at the house.  Of course I throw them out so it's of no help.

perhaps I'll save the alcohol soaked ones for a non-work related event...and torture the ladies with the butter filled ones instead.

yes, alton brown says that no matter what, when cooking w/ alcohol you never get rid of all of it.

i didnt read the article cause im lazy, but i just saw his show on sauces the other night and he mentioned that.

i trust alton, how could anyone not

i don't see what's the big deal, people would at most get the equivalent of one small glass of wine, it seems. plus an apple.

that wouldn't turn anyone into a blabbering drunk

and, it's not like you all have to operate heavy machinery in the next 60 minutes or so, is it?

You cant work with children while drinking alcohol, I believe.

For some reason, prospective parents tend to look down on it, even if their spoilt brats deserve to be drowned by drunkards.

yes that's exactly it.  So I have to save the booze apples for after the kids are out for the summer.

well if ya slip a little vodka into their kool-aid the kids won't notice how wasted the adults get.

(joking, of course. don't do this........ever.)
