Title: Vegetarian Grilling

This summer I want to do some more stuff with a charcoal grill, but I'm lost beyond pineapples and Boca burgers(both of which are about to be put on the grill, my charcoal is still heating up).

Assuming I don't burn down my house, as I almost just did(grill was waaay too close to the house, used way too much lighter fluid), does anyone have any suggestions of veggie dishes I can grill this summer?

Zuccini
Summer squash
bell peppers
grape tomatoes
avocado*
fennel
onion
leeks
mushrooms










*No, really!  Cut in half, remove pit, score the flesh like a checkerboard, drizzle olive oil, lime juice, salt pepper, garlic powder.  Put on grill, skin side down for 4-5 minutes.

Amen on the mushrooms! Get big portobello caps and they are like burgers. Friggin delicious.

Grilled squash is FANTASTIC.

Grab some portobello shrooms, they make fantastic burgers, but I don't know how to marinate/prepare them properly myself. (They're poisonous if not cooked correctly, no?)

So maybe someone can suggest something.

Not poisonous.  EVOO & Balsamic for a dressing.  salt/pepper

Which way are you cutting them in half? When I'm just going to eat them with a spoon I cut it in half width-wise, but with skin down I'm thinking length-wise is better for this?

also, avocados are the best food ever. and my pineapple is almost done :)

Ugh, I hate mushrooms. The flavor is not bad at all, but the texture and concept make them uneatable for me.

My girlfriend made a pasta salad for me once with mushrooms and I wouldn't eat them. Then half a year later did ate some other shrooms, and while she didn't really like me eating hallucinogens, her first comment was

"WHAT?! you ate mushrooms you KNEW were going to taste bad and you wouldn't eat mine?!"

if I end up getting dressed today(it's my only day off this week, I'm allowed to stay in boxer-briefs all day) I'll run to the store and grab some, that sounds awesome. if not they're for dinner tomorrow night :)

cut eggplant lengthwise
brush w/ olive oil sprinkle w/ salt, pepper*, little italian seasoning
grill

cut potatoes lengthwise into quarters
boil for about 5 minutes (no longer)
brush w/ olive oil sprinkle w/ salt, pepper
grill

marinate asparagus in
olive oil, balsamic vinegar, salt, pepper, little italian seasoning
grill

shuck some corn
rub w/ butter, replace some of the husks, wrap in foil
grill

portobello caps marinated in balsamic, o-oil, salt, pepper, ital season can be good grilled and put on burger bun w/ lettuce, tomato, red onion and mayo
but if you cant get past the texture, hang it up.

peaches
cut in half and pitted
just put em on the grill

green tomatoes
slice, salt pepper, little o-oil

caution- too much olive oil will flare up like rocket fuel

*by pepper i mean fresh cracked peppercorns of course
