Sriracha in the pasta water?!
depends. if you want the sauce to actually get into the pasta:
- cook it until nearly done (al dente)
- remove most of the pasta water
- add sauce
- stir, until it's regained the heat lost from the colder sauce
- cover with lid, turn off heat (or remove from heat if you have *shudder* an electric stove)
- wait a couple of minutes
that way, the last bit of cooking will happen with the heat removed, and use up the remaining sauce/water. so that the sauce you add, actually gets into the pasta.
(this actually works out better if you use pasta sauce instead of hotsauce, but you can use whatever you like, of course ;-) )
I actually started this thread as a joke, but that's a good idea nonetheless.
I love sriracha. Fact.
At Suu Casa, pasta water goes in YUO.
Too spicy for me Im a pussy when comes to spicy stuff
I adore sriracha--my husband prefers that chili-and-garlic stuff over it, though, so we have to have BOTH in the fridge at all times.
