Canned brains in gravy are disgusting. Much better fresh fried and crispy with eggs and biscuits!
I have it on sound authority that sauteeing in olive oil with a litte garlic, and serving with white wine is the way to go. Better fresh though.
olive oil? i'd go with a nut oil, good call on the garlic and especially the white wine.

Might be a problem, depending on the flavor of the oil on both counts. Definitely, a light olive oil, or a rapeseed / saflower if you're going the nut route. As much as I love sesame oil and extra - virgin olive oil, I can see it becoming nut flavor in a brain vehicle QUICK.
I tend to trust Hannibal Lechter in these things, but I may need to re - watch the movie to see if they show what he used. :wink:

Now if you are going to do them Hannibal style, then this is how I learned to do it....
Salt and pepper the pieces of meat
In a pan saute garlic, rosemary and shallot in olive oil until shallots start to get translucent.
Add brains and saute until done. About the same time your shallots are nicely carmelized.
Searve with crusty bread and the oil from pan for dipping. I add a little extra oil, garlic and rosemary.
In truth they are very good, BUT, they are an aquired taste.
