You know, in looking at that purple, it actually came out quite nicely as a baked product!  I'm thinking I'll be making these today once it cools down a bit.

Ok, eating this cake freaked me out.  It was like playdough.  The consistency and taste was ok, just looked odd to me.  Too--bright?  At one point I said I felt like I was eating mashed up muppets.

Pretty colors, just odd.    But  my husband enjoyed it.

Unrelatedly, I really want to make these apple spice cupcakes with cream cheese frosting (or.. maybe normal frosting?) but I need an excuse. Otherwise they will sit in my house uneaten, since everyone's trying to lose weight. Saddy sad sad.

Take 'em to work!  I've noticed people at work will nosh on ANYTHING.  Leftover baked goods always go down well there.  (course I work from home, so I send them with my husband to his clinic)

APPLE SPICE CUPCAKES

1 1/2 cups sugar
1/2 cup (1 stick) butter, room temp
2 large eggs
1 tbsp pure vanilla extract
1 1/2 cups flour
1/2 tsp salt
1 3/4 tsp baking powder
3 tsp cinnamon
3 tsp ginger
1/2 cup applesauce
3/4 cup milk*
1 tbsp lemon juice

Preheat oven to 350°F
In medium bowl, beat sugar and butter until creamy. Beat in eggs and vanilla.
Combine salt, flour, baking powder, cinnamon, and ginger in separate bowl. Stir, then add to first mix in stages (add some, mix, add some more, mix, etc).
Add applesauce and lemon juice, mix until smooth.
Add milk as necessary.
Fill cups 2/3 full, bake for 25-30 minutes.

*I put less than half the milk in, and the batter was fine. With the applesauce, it seems kind of unnecessary.


Frosting is the same vanilla buttercream as last time. The birthday coworker mentioned green frosting, so I tried for a granny smith color. Cell phone picture is crappy, but I think I did a decent job.

Red velvet cupcakes with vanilla cream cheese frosting:





Camera phone, but they'd probably be shitty pictures either way. I was lazy and didn't feel like finding my piping bag, so I used a big ziplock bag, cut one of the bottom corners off, and used that. I think it worked decently well, even if they won't be winning any cute cupcake awards.
