So I'm making Pumpkin pie for thanksgiving.  I don't need help with that recipe, but the next day I'm going to another thanksgiving with my friends.  My good friend's boyfriend is gluten free as it rapes his stomach/digestive system. Because of that I want to make a gluten free pumpkin pie recipe.


Of course I know shit about gluten free.  Any ideas?  I saw almond meal at trader joes...would that be good for crust?

I have read that almond meal is better for quick rise stuff like muffins.  They don't provide much structure.

Buuuut I found a gluten free crust recipe.

I love that it's supposedly like shortbread.  What goes better with pumpkin pie than shortbread??? :D

I use oat flour, straight-up sub for wheat.

Amaranth grain has been harvested since, like, farming began.

Oat flour would be simpler.

Now I want to make pumpkin pie with shortbread crust.

Pie is the superior dessert product.

Yes; that's what I use when I make pie for my gluten-intolerant friends.

Sometimes I mix it with buckwheat flour, which is cheap and good and not related to wheat at all.

also, problem solved by simply purchasing gluten free pie from whole foods.
