Only  used achiote and garlic, rather than toasted cumin, mexican oregano and so forth....

Serranos rather than habeneros and a crock pot then shredded rather than banana leaf steaming.

One of those boxes of bags that says Spanish Rice on the front with a really pretty picture, but you end up with something that tastes like you cooked yellow rice with ketchup.  And crappy ketchup at that!!

I do something similar, but I use more spices, use vinegar and tequila...

And of course, PORK BUTT.

No the rice is jasmine rice I washed until the water ran clear, then I added water, mexican hot tomato sauce, cumin, garlic, and chicken stock. It looks brown because of poor lighting but it was actually a vibrant red.
