So I had to look that up and indeed "cippolini" is Italian for "small onion", except they're also flat which makes them suitable for roasting.

So if you cut them in rings anyway, you might as well use shallots?

And sous-vide? You vacuum seal the rings separately?

But in this case the only thing sous-vide does is make sure no aroma escapes while cooking, you might as well slow roast some shallots in the skins at low temp and slice them up after for the same effect?

What is bun powder? Like breadcrumbs but finer? How do you eat it?

And ketchup brown butter emulsion? That's just ketchup mixed with browned butter, right? (cause ketchup emulsifies pretty well, no need for yolk or anything)
