We grew some peppers this summer.  Not the big ones you get in the grocery store, but smaller ones.  We let them get nice and red before we picked them.  So I made that sammich with the home grown peppers.  Just scooped out the innards and cut them into rings.  They were a bit more pungent and provided some excellent flavoring.  Alas, I must wait til next season until I can enjoy them again.

IDEA! Some older guy that works with my boyfriend cooks all kinds of hot peppers and gives some to my boyfriend when he picks them. I think we still have a few left at home. Super spicy grilled cheese!

The red peppers are a terrible idea, too sweet, not much flavor. Roast some poblanos and you would be much better off. Also Carmelized onions and bacon lardons Don't forget to season your cheese with fleur de sel.
