Today, for a brief second, I thought of a life without Roger. It was much like my current life, except that this forum was a bit nicer.

Grilling season is here!

Finally was able to get the hibatchi rolling this weeked.

2 game hens
cumin seed
coriander seed
curry powder
cayanne pepepr
garlic, grated

Toast 1/2 tsp cumin & coriander in a skillet, then grind to powder.

In a bowl mix cumin, coriander, 1/2 tsp curry powder, and 1/4 tsp cayenne.  Mix with garlic to form a paste.

Split game hens, remove backbone, crack breastbone so hens will lay flat.

Separate skin from flesh, and smear paste in between.

Season skin w/ salt.

Grill, skin side down, over medium coals for 15 minutes.  Turn, grill another 15.

Oh, so awesome.

Sounds great!  People grill all sorts of stuff now--even salads...hadn't heard of the cgh's being grilled yet.

Also, is this a bad time to mention it's ALWAYS grilltime here?  :P

That sounds awesome LMNO, I am going to have to try it.

I fired up our grill this weekend too....

Tuna steaks in a ginger - lime marinade.

Juice of 3-4 limes (one per steak) juice in a bowl
grate enough ginger for a good 2 tablespoons
2 teaspoon honey (don't use a real strong honey as it will over power, honey is for a touch of sweetness only)
salt, pepper and garlic to taste

marinate overnight.

grill lightly on both sides, or until the doneness you prefer, we eat ours rare.

Served with grilled veggies tossed with pasta!

We have a grill/smoker. I'm working up a seasoning so I can smoke a whole chicken until it falls off the bone. Then we will cut it up and make chicken and dumplings.

Slightly, but the honey counteracts the acidity a bit.  You can also use margharita mix instead of lime juice.
