We're in the process at work of implementing my cunning plan to add moar gourmet sammiches, starting with epic grilled cheeses. I'll elaborate more when I get home but I had to share the one I just had:

Pastrami, swiss, grilled onions, marinated mushrooms and Dijon mustard on sliced Italian...I had to save half for later, it's just too awesome.

Another one we experimented with was Swiss, portabello mushrooms, grilled onion and tarragon mayo. It was fucking AWESOME.

We have our current house grilled cheese which is American, bacon, tomato, sliced avocado and Dijon.

My crazy owner loves apples and came up with one that involved BOTH Swiss and gruyere, green apples, onions, and something else. We were like, "whaaaaat?"

If you do a ham and brie, try apple on it. mmmm.
i'd serve it with a warm carrot, rum,  raisin type salad
